- 600 g. clams
- 0.5 medium onion
- 1 garlic clove
- 0.5 chilli
- 2 tbsp. wheat flour
- 1 tbsp. sweet paprika
- 1 tbsp homemade tomato sauce
- 0.5 cups of white wine
- Fresh parsley
- Olive oil
How to make Fisherman' style clams
Fisherman’ style clams (‘a la marinera’) are the traditional way of cooking clams in Spain. A very simple and easy recipe but fresh and tasteful that relies on really fresh clams. Let´s see how to cook them:
Finely mince the onion and the garlic and simmer them in a pan with olive oil. Add the chilli and keep simmering until they practically fall apart. Then goes the paprika and the flour and stir it quickly to make a paste or Roux.
Next, add the white wine and stir until the alcohol evaporates. Next, add the tomato sauce, stir and incorporate the clams, cover and wait for them to open. Once opened, remove from the heat and they’re ready to eat.
- Serve them and eat while still hot. Be sure to have a loaf of bread at hand so you can finish that delicious sauce. Enjoy!
